How do indies sign exclusivity with companies?

Like how do they sign deals? Do you just go up to one of the big 3 (Sony, MS, Nintendo) and show them you're game?

Yes. These are publishing contracts, so it's like netting yourself any kind of publishing deal. You've got to get in contact with the publisher and pitch them your wares.
If you cant get in contact, a good way to make the initial contact would be to book exhibition space in a convention like Pax, etc...

For an Indie developer the best way to get onto a major console is to first and most importantly MAKE THE GAME. Then what you do is release the game online on as many websites as you can. If your game catches on and people like playing it, then this will make it allot easier to get onto a major console. Another way is to just release the game as an Indie game by yourself. Xbox, PS, Android all have easy ways for Indie developers to get published with out having to do a bunch of paperwork. I mean have you seen the Indie games out there? Most of them are crap, and yet you will still find them on Xbox and PS. So don't worry too much about getting the big game companies interested in your game. Just make it, release it, and if the world loves it, the game companies will be contacting you.

Yes you are right in some regards. Walking up to them and showing your game might be the right way to go about it though. As said, make the game get it out there. Make it great. If you make it great and people like it you could then throw it their way to see if they will take it, often unsolicited stuff is not picked up. But if the game is great and there is a lot of good buzz about it then it might just come your way.

The smaller indies who have been picked up by big companies to publish with made one or two great games. They showed they can and that means there is a chance for more.

But, that said that if you have made a great game, there is nothing wrong with trying to send it to them, all of them see which might pick it up.

No, you don't just go to them and show them your game. You contact them and inquire about making a submission. See FAQ 21: http://sloperama.com/advice/lesson21.htm

Exclusivity is very different from a one-game deal. First things first. Get a publishing deal with a company and do several games with them and decide if the relationship is good for you, before you bring up exclusivity. But why would you want an exclusive deal anyway? It's usually the publisher who seeks exclusivity with a developer (to keep them from wandering off to someone else).
