Randomly-made dungeons

I'd like to know how randomly-made dungeons or other areas are made. More of the theory behind it and less of the actual code used. Of course, totally random dungeons that have no coherency at all and are just a bunch of disconnected walls, floors, and enemies are easy to make, but completely useless. I'm looking more for the ones that have recurring-themes and fit together well, like in the Diablo games. Thanks in advance!
