I know how to calculate it in X and Y but I think in Z it would be constant.
Just making sure if this assumption is correct?

How do you calculate the z velocity given a theta and initial velocity. Is it
possible or will it be some constant, I assume?
Your assumption is correct. If there is only one angle given, then the output will lie in a single plane. It sounds like you've chosen the xy plane and therefore yes, z will be constant.
