Have you any experience in C++? The free, open source Simutrans-Extended (link in my profile) always welcomes new contributors, and open source is, of course, splendid for your portfolio because people can see the actual code that you wrote.

This is an amateur hobby project, so there is no set timescale - you can work on such individual projects as you choose as your time allows.
