how can i compute normals when i use the mode of
glBegin(GL_TRIANGLE_FAN);

The drawing mode has nothing to do with it. To calculate the normals of a triangle, take the cross product of the AB and AC (A B and C being points on the triangle in clockwise order) and normalise the result (scale it to length 1). If you need more help, look at the third tutorial on my site.
