Which is the best place on a sprite to position it from? In my case, it's a fighting game. Would it be the center, the bottom center, top-left corner, or what? I can't decide. Although I am leaning towards using the bottom center of a sprite. What do you think?

I like bottom center. I'm guessing your fighters stand on the ground so IMO the feet area makes the most sense to "orient" your sprites around.
I usually center my sprites around their rotation point (ie, shoulder of an arm, center of a grenade, etc).

You can give your sprite a "hot spot" attribute which can represent the rotation point of the sprite. Have it default as the center and then let the client programmer change the "hot spot" when required.

There is no rotation point since I'm not gonna be using rotation. So I guess the bottom center seems alright, I hope. Unless someones gotta better suggestion.
