What Professions and Skills are missing?

I'm writing a game design document, and for anyone who has played PC RPGs, I'd like to know: What professions and/or skills do you think are missing in today's RPGs? (Both singleplayer and multiplayer, whichever you play) Some examples would be like... Fishing... Blacksmithing.. Stealth... but we know those three are very common. So what do you guys think? Are the commercial games missing some vital game-play features?

Don't just add skills to your game design. Add fun activities. Then add skills that have a very small effect on them. If you do it the other way around, you'll end up with boring chores instead of fun gameplay.
Political/governmental professions (lord, emperor, advicor, spy), shopkeeper, merchant, military professions (commander, guard, etc), religious professions (priest, high priest), etc. I think having some kind of political power struggle in your game can make for some interesting gameplay.

Law enforcement and criminal investigations would have some interesting potential.
i'd ask first about the context of such rpg, skills and professions based in the reality of the game, rather than a standarized list.
